Hamantashen Recipe

For a Batch of 2 Dozen
2 eggs
1/2 cup canola oil 
2/3 cups sugar
1 teaspoons vanilla
1.5 teaspoons baking powder
1/4 teaspoon salt
2-3/4 cups flour
Optional: 1-2 Tbsp milk if dough is too dry or crumbly

For filling (choose any of the following or your own creative idea!):

Nutella
Chocolate chips
Simon Fisher prune and apricot butters
Jam + corn starch, whisked over a stove
Poppy seed filling (find in a can on Amazon – thank you Debbie Katz for the great tip!)
Prune filling

 

  1. Directions:
    Beat eggs well, beat in oil, sugar, vanilla, baking powder and salt.  Add flour gradually.  

 

  1. Shape the cookies:  
    Roll out on lightly floured mat till one-quarter inch thick.  Use a juice glass to cut circles. OR Break off the dough a small golf ball or whatever size you want, press in my hand into a disc, add filling and fold all while in my palm, place on cookie sheet.
  2. Place on lightly greased baking sheet.  Place small amount of filling in each circle, form three corners to shape.
  3. Bake at 350 degrees, check after 10 minutes.  Bake until lightly golden browned.  The lighter in color, the cakeier the texture, the darker the crisper they will be.
  4. Cool on wire rack.
  5. Freezes very well.
